Birthday!


Tomorrow is my brand new hubby’s birthday. We took the day off to celebrate (as if we really needed an occasion). Isn’t it so much fun to make merry and be carefree and just bask in happiness? Yeah the answer is yes.

A Spooky Little Girl like You

Halloween is one of my all-time favorite occasions. I LOVE to dress up in costume. I’m the kind of girl that wears wigs to a concert and noodles, so you can imagine…Luckily, my new husband shares my affinity for playing dress-up and allows himself to be “convinced” to participate.
At our rehearsal dinner, my mom made an extremely lovely video montage of us and we were dressed up in costume in so many of the pictures.
I began to embrace it as our equity. Here are some costumes from years past.

ONE MONTH TO GO

I’m slightly freaking out. Our wedding is officially one month away! I would be lying if I said I wasn’t stressed. I AM. I had no idea how many details there would be. But, I have to say I am more ecstatic than I am stressed. Granted things will go wrong, but I get to be with the sweetest guy I’ve ever met, everyone I love is coming to celebrate and then it’s off to the beach. What could be better?

Recipe: Penne & Artichokes

I made this last night and it was a huge hit. Typically when I make pasta, I’m always tempted to add cream or butter or something to make it a bit tastier. But this totally delivered on the taste factor. I did add chicken (at Ro’s request). There was plenty for three servings last night as well as lots of leftovers.
Ingredients (serves 6)
1 lb. penne rigate
1 small onion, finely sliced
2 garlic cloves, minced
1/4 cup extra virgin olive oil
8 artichoke hearts, quartered
1 1/4 cups canned diced tomatoes
1 tbsp chopped parsley
1/2 cup grated Parmesan cheese
Salt and pepper
In a skillet over medium-high heat, sauté the onion and the garlic in the olive oil. Add the artichoke hearts. Cook to a pale gold color over high heat, then add the tomatoes, seasoning to taste. Simmer 15-20 minutes over medium heat.
Cook the penne rigate until al dente according to package directions in boiling, salted water. Drain and add to the artichoke sauce. Sprinkle with chopped parsley and grated Parmesan.
