Feeling Dreamy

I had a lovely weekend with my sweetheart. We realized we are officially old when we left the music festival early. I do believe we had heat exhaustion, but it was nice that we were on the same page…even if it was a rather lame one. Sometimes one only needs a single night away to realize the comforts of air conditioning and a clean bed or kisses from puppies and take-out.

Today it’s rainy. And it sounds like this outside…

I’m feeling dreamy and lethargic after spending 1/2 the weekend in extreme heat and the other 1/2 in extreme relaxation mode.

And wouldn’t we all love to have an office like this to get creative in? We are shifting cubes in my office and I am not looking forward to it. I try to be a person that embraces change, but sometimes it truly is hard, isn’t it? Even with the little things that aren’t of much importance…like where you sit or whom you sit by.

Tomato Pie

R & I re-created a recipe we loved when we ate with his dad in Lake Village. It’s called Tomato Pie and it’s like nothing we had ever tried. Robert calls it pizza-ish and quiche-esc. We made one for the memorial day pool party and got rave reviews so I thought I would share.

Ingredients

1 flour-based pie crust

4 medium fresh tomatoes

kosher salt, black pepper and fresh basil

1 cup Hellman’s mayo

1 package mexican four cheese blend

Directions:

Slice (and peel if desired) the tomatoes thinly. Mix the Hellman’s and cheese in a separate bowl. Cover the pie crust with a layer of tomatoes. Sprinkle with salt, pepper and basil. Top with a layer of the mayo/cheese mixture. Add another layer of tomatoes and repeat! It’s quite simple. When you’re ready to bake, heat the oven to 350 degrees and bake for 30 minutes. The pie needs to sit after baking for at least 10 minutes or it’s very difficult to cut.

Like a pizza, this pie makes the perfect base for all sorts of toppings. We haven’t tried it yet but we’d like to top it with asparagus, prosciutto or add some jalepenos. I would also like to re-work the pie to incorporate an olive oil/fresh mozzarella mixture instead of the mayo/cheese blend.

Becoming a mother again

Hello Gorgeous!

My bf and I have gotten a puppy together. We’ve wanted to take the dive for quite some time but have never actually come close. I have a bi-polar dachshund and he wanted a great dane, so we were having a hard time compromising.  Then it all happened so fast! We met her sister (my bestie – Lo’s sister had adopted her). Robert got an email the next day and we went to visit her, the next day (yesterday) we brought her home!

She’s adorable, I know. Her name is Miss Roberta Roux Bridewell, Bertie for short. She’s just a delicious dessert dog! So precocious and affectionate. I’ve never had a puppy! Wiggles was 2+ years old when I adopted him. I just want to do everything right so she turns into the type of dog you can take anywhere and that everyone wants to be around! I’m so nervous! I bought Puppies for dummies yesterday! I also don’t want my already sour wiener feel left out.

Robert seems confident that we’ll figure everyone out. But, I don’t want to miss that small window where they’re so impressionable and learn with ease (not to nip, not to pee in the house, not to jump, not to beg, tricks). Who knows what will happen? All I know right now is I am in love with this beautiful creature and even more charmed by my beau when I see how sweet he is with her…

Weekend Fun

As I’ve gotten older, I’ve realized that I cannot party like I used to. Although it is sad, it is most certainly true and I’ve had to learn to accept it. With that being said, I can do two regular nights out or one big night and one rest night. This past weekend…I did the latter. It was one of those really impromptu things, I planned to make dinner for a couple of friends and BOOM – it was a party! I discovered a new recipe, danced up a storm and took some cute photos (at least I thought they were cute at the time).

Powerpointing, etc.

Yesterday, I was telling my mother about a presentation I gave and she asked me if I did my powerpoint by myself. After I explained that I had, she went on to inquire where I learned to do a powerpoint? I later learned she did not know how to create one and considered  them to have some sort of mystique. I wonder if she knows I can do excel and access too, oh my?!

This week, my beau and I have turned over a proverbial “new leaf”. My friend from work’s husband was giving free bikram yoga classes to garner interest in his new yogi venture. I’d gone to my fair share in college and knew that while hot yoga is difficult, the results are inexplicably incredible. After 90 minutes of sweating it out in 104 degree temps, you leave slightly nauseas, soaking wet, starving and better than ever! I brought Robert along on Monday night and seemed to have forgotten how freaking HOT it was! I was, however, impressed with my black-belt-boyfriend’s flexibility ;). We went back last night for more and I must say that it was much easier and enjoyable and I think I’m already hooked again!

Gushing…read on at your own risk

I feel like the luckiest girl in the world. I totally feel like Nellie from South Pacific singing “I’m in love with a wonderful guy”. My boyfriend is quite handsome, the kind of handsome that makes you feel dreamy and intrigued rather than intimidated. He’s not quite aware of the perfect slant of his nose or the charm of his smile. He doesn’t really know how dashing he looks in a crisp suit or that he gets better looking every day. Of course, it only adds to his appeal.

Besides being delicious to look upon, he has an unfailingly sweet heart. He’s easy-going, helpful, generous, respectful, funny…and especially adorable and snugly when sleepy. The thing I like most about him is his open mind. He’ll try almost anything and instead of feeling like a mentor, I feel like I’m discovering new food or places or music with him. Since we started dating, he’s been opposed to dancing with me, having claimed that tall people aren’t meant to move quite that way. I’ve recently gotten the pleasure of encountering these “moves” for myself and I have to say he was wrong. Maybe it’s just that I find him so precious anyway, but I thought he was a delightful dancer. He mostly just shimmies and smiles, but that’s all it really takes right?

He does the dishes and makes the bed. He cooks and reads aloud to me from Harry Potter. He picks me up and takes me on dates. He holds my hand and kisses me in public (when appropriate). He’s kind to my mom and affable with my friends, he’s even tolerant of my bipolar wiener dog. He likes to go out or stay in. Even his fascination with all things SPORTS is endearing because he always includes me and genuinely (in my opinion) wants me around.

I don’t know how anyone could disagree that I’m pretty fortunate to have a person like this in my life. I hope I make him as happy as he makes me…I haven’t gotten any complaints…yet.
